
Asiago Potato Au Gratin

Ingredients
2 ½ (1 ¼ ) lbs Potatoes (sliced thin)
2 ½ ( 1 ¼ ) Cup cream
4 (2) oz Bacon, cooked & crumbled
6 (3) oz Asiago, shredded
1 (1/2) tsp Salt
1/2 (1/4) Cup Breadcrumbs
4 (2) Tbsp Parmesan cheese
2 (1) Tbsp Butter, melted
Preparation
*Measurements in parenthesis are for a half recipe*
Prep: Spray a 3 quart (1 1/2 quart for half recipe) baking dish with cooking spray and set aside. Preheat oven to 400 degrees.
In a large skillet add cream, potatoes and salt. Simmer while partially covered over medium to medium/low heat. Stir occasionally until barely tender (about 8-12 minutes).
Meanwhile, in a small pot melt butter and mix with breadcrumbs and parmesan cheese.
Transfer potatoes with slotted spoon to baking dish. Top with asiago and bacon. Pour the rest of the cream over the potatoes.
Evenly scatter breadcrumbs over the top. Place in the oven and bake until bubbly and brown on top (around 25-30 minutes).
After removing from the oven, let it sit for 10-30 minutes to allow liquid to fully absorb.
Full recipe makes 8 servings, half makes 4.
