Asiago Potato Au Gratin

Ingredients

  • 2 ½ (1 ¼ )  lbs Potatoes (sliced thin) 

  • 2 ½ ( 1 ¼ )  Cup cream     

  • 4 (2)   oz Bacon, cooked & crumbled 

  • 6 (3)  oz Asiago, shredded

  • 1 (1/2)  tsp Salt

  •  1/2  (1/4)  Cup Breadcrumbs

  • 4 (2) Tbsp Parmesan cheese

  •  2 (1)  Tbsp Butter, melted

Preparation

*Measurements in parenthesis are for a half recipe*

Prep: Spray a 3 quart (1 1/2 quart for half recipe) baking dish with cooking spray and set aside. Preheat oven to 400 degrees. 


  • In a large skillet add cream, potatoes and salt. Simmer while partially covered over medium to medium/low heat. Stir occasionally until barely tender (about 8-12 minutes).


  • Meanwhile, in a small pot melt butter and mix with breadcrumbs and parmesan cheese. 


  • Transfer potatoes with slotted spoon to baking dish. Top with asiago and bacon. Pour the rest of the cream over the potatoes. 


  • Evenly scatter breadcrumbs over the top. Place in the oven and bake until bubbly and brown on top (around 25-30 minutes). 


  • After removing from the oven, let it sit for 10-30 minutes to allow liquid to fully absorb. 


  • Full recipe makes 8 servings, half makes 4.
