Apple Pork Sausage Cups

Ingredients

  • 1 1/4 lb ground pork sausage 

  • 1 cup finely diced apple 

  • 1/4 cup chopped onion

  • 1 cup dried cranberries, chopped

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg 

  • 1/4 tsp salt 

  • 3/4 cup shredded mozzarella 

  • Maple syrup

  • 45 phyllo cups

Preparation

Prep: Preheat oven to 350 degrees

  • In a skillet, cook sausage over medium-high heat, stirring occasionally until it's no longer pink (about 4 minutes).


  • Add in apple and onion; cook for about 1 minute. Drain the skillet, and stir in cranberries, mozzarella, maple syrup, cinnamon, nutmeg and salt. 


  • Spoon mixture into phyllo cups, and place on a cookie sheet. Bake for 10-15 minutes until hot
