Boursin Cheese Sweet Potato Rounds

Ingredients

  • 2 Medium sweet potatoes

  • 1 (5.2 oz) box Boursin Garlic & Fine Herbs Cheese

  • 1/2 Cup dried cranberries, chopped

  • 1/2 Cup crushed walnuts 

  • Honey, for drizzling

Preparation

Prep: Preheat oven to 400. Wash sweet potatoes and slice into 1/4-inch rounds. Spray baking sheet with olive oil spray. 


  • Place rounds in a single layer on baking sheet. Roast until golden, about 20 minutes. Cool for 5 minutes. 


  • Spread a generous amount of Boursin cheese on each sweet potato slice. Top with dried cranberries and walnuts. Drizzle with honey before serving.  


  • Makes about 25-30 rounds.
