Boursin Cheese Sweet Potato Rounds

Ingredients
2 Medium sweet potatoes
1 (5.2 oz) box Boursin Garlic & Fine Herbs Cheese
1/2 Cup dried cranberries, chopped
1/2 Cup crushed walnuts
Honey, for drizzling
Preparation
Prep: Preheat oven to 400. Wash sweet potatoes and slice into 1/4-inch rounds. Spray baking sheet with olive oil spray.
Place rounds in a single layer on baking sheet. Roast until golden, about 20 minutes. Cool for 5 minutes.
Spread a generous amount of Boursin cheese on each sweet potato slice. Top with dried cranberries and walnuts. Drizzle with honey before serving.
Makes about 25-30 rounds.
