
Brie Quesadillas

Ingredients
8 Large Tortillas
2 Small wheels of Brie
Apple Mint Chutney
5 Granny Smith apples
1 Tbsp. Chipotle paste
1/2 Medium onion finely chopped
1 tsp. Cinnamon
3 Tbsp. Cider Vinegar
2 Tbsp. Maple syrup
2 Tbsp. Brown sugar
1/2 Tbsp. Mint, chopped
Pinch of salt & pepper
Berry Coulis
3 Cup Berries (your choice)
1 Cup Sugar
1/2 Cup Water
Preparation
Apple Mint Chutney
Peel, core and dice apples into 1 inch peices. Combine all other ingredients except the mint into a sauce pan. Bring to a boil on high. Reduce heat and simmer for 30 minutes. Remove from heat then add in the mint, then set aside.
Berry Coulis
Place all ingredients for berry coulis into a pot and reduce by 1/3 over medium heat. Puree the mixture in a blender then strain, and set aside.
Prep: Preheat oven to 375.
Assemble: Lay 4 tortillas flat on cookie sheets. Generously spread chutney on tortilla. Cut brie into thin slices and lay cheese over the chutney. Place second tortillas on top.
Bake in the oven until golden brown and brie is melted. Cut into wedges and top with berry coulis.
