
Ginger-Soy Salmon Balls

Ingredients
12 oz of cooked salmon
1/4 cup panko breadcrumbs
1 large scallions, chopped
1 large egg, lightly beaten
1 tbsp mayo
2 tsp fresh ginger, grated
1 tbsp reduced-sodium soy sauce
Dipping Sauce
4 tbsp soy sauce
4 tbsp rice wine vinegar
1 tbsp honey
11/2 tbsp ginger root
1 tbsp sesame seeds
1 tbsp sesame oil
Dash garlic powder
Preparation
Prep: Preheat oven to 400.
Coat a large rimmed baking sheet with cooking spray.
Combine salmon, panko, scallion, egg, mayo and ginger in large bowl. Stir breaking up the salmon until well mixed.
With clean hands, roll the mixture into 16 balls, about 11/2 tbsps each. Place on prepared baking sheet.
Bake, turning once, until firm and golden, about 20 minutes. Remove from the oven and drizzle with soy cauce, stirring to coat
Mixing together dipping sauce ingredients until well combined and serve.
