Ginger-Soy Salmon Balls

Ingredients

  • 12 oz of cooked salmon

  • 1/4 cup panko breadcrumbs 

  • 1 large scallions, chopped 

  • 1 large egg, lightly beaten 

  • 1 tbsp mayo 

  • 2 tsp fresh ginger, grated 

  • 1 tbsp reduced-sodium soy sauce 


 Dipping Sauce 

  • 4 tbsp soy sauce 

  • 4 tbsp rice wine vinegar 

  • 1 tbsp honey 

  • 11/2 tbsp ginger root 

  • 1 tbsp sesame seeds 

  • 1 tbsp sesame oil 

  • Dash garlic powder 



Preparation

Prep: Preheat oven to 400.

Coat a large rimmed baking sheet with cooking spray. 

  • Combine salmon, panko, scallion, egg, mayo and ginger in large bowl. Stir breaking up the salmon until well mixed. 


  • With clean hands, roll the mixture into 16 balls, about 11/2 tbsps each. Place on prepared baking sheet. 


  • Bake, turning once, until firm and golden, about 20 minutes. Remove from the oven and drizzle with soy cauce, stirring to coat 


  • Mixing together dipping sauce ingredients until well combined and serve.
