Prosciutto Wrapped Dates

Ingredients
1/4 Cup cream cheese
1/4 Cup goat cheese, softened
1/4 Cup finely chopped walnuts, toasted
1 Tbsp. chopped fresh parsley
1 Tbsp. lemon zest
1 tsp. minced shallots
20 Medjool dates, pitted
10 Slices prosciutto halved lengthwise
Preparation
In a bowl combine goat cheese, walnuts, parsley, zest and shallots for the filling. Season with salt and pepper. Set aside.
Fill dates with heaping teaspoon of mixture. Wrap dates with halved prosciutto slices and secure with toothpicks.
Transfer to baking sheet. Cover with plastic wrap and chill for 30 minutes, or overnight.
Preheat oven to 375. Bake dates until cheese is bubbly and prosciutto is crisp, approx. 15 min.
