Prosciutto Wrapped Dates

Ingredients

  • 1/4 Cup cream cheese

  • 1/4 Cup goat cheese, softened

  • 1/4 Cup finely chopped walnuts, toasted

  • 1 Tbsp. chopped fresh parsley

  • 1 Tbsp. lemon zest

  • 1 tsp. minced shallots

  • 20 Medjool dates, pitted

  • 10 Slices prosciutto halved lengthwise

Preparation

  • In a bowl combine goat cheese, walnuts, parsley, zest and shallots for the filling. Season with salt and pepper. Set aside. 


  • Fill dates with heaping teaspoon of mixture. Wrap dates with halved prosciutto slices and secure with toothpicks.


  • Transfer to baking sheet. Cover with plastic wrap and chill for 30 minutes, or overnight.


  • Preheat oven to 375. Bake dates until cheese is bubbly and prosciutto is crisp, approx. 15 min.
