Smoke Gouda-Chorizo Jalapeño Poppers

Ingredients
2 Links fresh Chorizo, casings removed (approx. 8 oz)
8 oz. Smoked gouda cheese, shredded
4 oz. Cream cheese, softened
3 Tbsp. Sour cream
1/4 Cup Red onion, finely chopped
1 Tbsp. Hot sauce
1 Large egg, lightly beaten
12 Large Jalapeño peppers, halved lengthwise and seeded
Salt and pepper to taste
Preparation
Prep: Preheat oven to 375.
Brown the chorizo in a skillet over medium-high heat, approx. 8-10 minutes. Remove from skillet and place in a large bowl, without the grease.
Mix in gouda, cream cheese, sour cream, red onion, hot sauce, and salt and pepper to taste with the chorizo. Stir in beaten egg
Press the mixture into the jalapeños and arrange on parchment-lined baking sheet.
Bake until golden and bubbling, approx. 20 minutes.
