Smoke Gouda-Chorizo Jalapeño Poppers

Ingredients

  • 2 Links fresh Chorizo, casings removed (approx. 8 oz)

  • 8 oz. Smoked gouda cheese, shredded

  • 4 oz. Cream cheese, softened

  • 3 Tbsp. Sour cream

  • 1/4 Cup Red onion, finely chopped

  • 1 Tbsp. Hot sauce

  • 1 Large egg, lightly beaten

  • 12 Large Jalapeño peppers, halved lengthwise and seeded

  • Salt and pepper to taste

Preparation

Prep: Preheat oven to 375. 

Brown the chorizo in a skillet over medium-high heat, approx. 8-10 minutes. Remove from skillet and place in a large bowl, without the grease.


  • Mix in gouda, cream cheese, sour cream, red onion, hot sauce, and salt and pepper to taste with the chorizo. Stir in beaten egg


  • Press the mixture into the jalapeños and arrange on parchment-lined baking sheet.


  • Bake until golden and bubbling, approx. 20 minutes.
