
Chocolate Crackle Cookies

Ingredients
1 ½ cups Flour
1 Tbsp Unsweetened cocoa powder
1 1/2 Cup Sugar
1 ½ tsp Baking powder
½ tsp Salt
6 Tbsp Canola or vegetable oil
3 oz Unsweetened chocolate, melted
2 tsp vanilla
3 Large eggs
1 cup miniature semisweet chocolate chips
2 cups powder sugar (for coating)
Preparation
Prep: Preheat oven to 350. In a small bowl whisk together flour, cocoa, baking powder and salt in a small bowl.
In a large bowl, mix oil, sugar, chocolate, vanilla and eggs on medium-low speed until well blended.
On a low speed, add flour mixture until well incorporated. Stir in chocolate chips.
Cover bowl and refrigerate 1-2 hours, or until firm enough to handle.
Line baking sheets with parchment paper. Place powdered sugar in a small bowl. Scoop 1 1/2" balls of dough for each cookie and shape into a ball. Roll balls in powder sugar to coat well. Space 2 1/2" apart on baking sheets.
Bake 14 minutes, or until just set (the cookies will be pretty soft to the touch). The insides should remain moist and somewhat fudgey.
Makes approximately 36 cookies.
