Deconstructed Cheesecake

Ingredients

  • 6 oz Cream cheese, softened

  • ½ cup Heavy cream

  • 1 ½ Tbsp Sugar

  • 1 ½ tsp Lemon juice

  • 1 cup Graham Cracker, finely crushed

  • ¼ cup Butter, melted

  • 3 cup Raspberries

  • 2 Tbsp Sugar *optional

  • 4 small glass cups or wine glasses

Preparation

Prep: Preheat oven to 350. 


  • Combine graham cracker crumbs and butter. Press onto a baking sheet in a thin layer (about 1/4 inch). Bake for 5-6 minutes or until light brown. Let cool, then break into big pieces. 


  • With mixer, beat cream cheese and sugar until smooth. Reduce speed and slowly add heavy cream. Increase speed until thick and stiff (around 2 minutes). Beat in lemon juice. 


  • *Smash 1 cup of the raspberries with sugar, and beat until smooth. 


  • Layer some of the graham cracker chunks on the bottom of each glass. Add some fresh raspberries and the raspberry puree (if you decided to make it) over the crumbs. Add cream cheese mixture over crumbs and berries. Top with the remaining cracker crumbs and more raspberries. Chill in the fridge and then serve.
