Lemon Blueberry Squares

Ingredients

Crust

  • 3/4 cup butter

  • 1/2 cup powdered sugar (with extra to spare)

  • 2 tsp vanilla 

  • 1/4 tsp salt 

  • 2 1/4 cup flour

Filling

  • 2 cup sugar 

  • 1/3 cup flour

  • 6 eggs

  • 1 Tbsp lemon zest 

  • 1/2 cup lemon juice

  • 1 cup blueberries 

Preparation

Prep: Preheat oven to 350

Line 13x9 pan with foil and spray with oil. 

  • Stir together melted butter, powder sugar, vanilla and salt. Slowly add in flour. Once crust is mixed press it into the bottom of the pan. 


  • Bake crust for 20 minutes or until edges are brown. 


  • While crust is baking, mix sugar and flour together, whisking in eggs until mixture is smooth. Stir in lemon juice and zest. Fold in the blueberries. 


  • Pour over finished crust. Bake 350 until set, around 30 minutes. 


  • Let bars cool in pan on a wire rack. Dust with around 1/4 cup of powder sugar. Cut and serve.
