
Lemon Blueberry Squares

Ingredients
Crust
3/4 cup butter
1/2 cup powdered sugar (with extra to spare)
2 tsp vanilla
1/4 tsp salt
2 1/4 cup flour
Filling
2 cup sugar
1/3 cup flour
6 eggs
1 Tbsp lemon zest
1/2 cup lemon juice
1 cup blueberries
Preparation
Prep: Preheat oven to 350
Line 13x9 pan with foil and spray with oil.
Stir together melted butter, powder sugar, vanilla and salt. Slowly add in flour. Once crust is mixed press it into the bottom of the pan.
Bake crust for 20 minutes or until edges are brown.
While crust is baking, mix sugar and flour together, whisking in eggs until mixture is smooth. Stir in lemon juice and zest. Fold in the blueberries.
Pour over finished crust. Bake 350 until set, around 30 minutes.
Let bars cool in pan on a wire rack. Dust with around 1/4 cup of powder sugar. Cut and serve.
