
Asian Lettuce Wraps

Ingredients
Filling
Choice of lettuce (I use little gems)
2 chicken breast, chopped
1 cup water chestnuts, chopped
1 cup mushrooms, chopped
1 tsp garlic, chopped
1/2 cup carrots, chopped
Stir Fry Sauce
3 tbsp soy sauce
3 tbsp brown sugar
1 tsp rice wine vinegar
1 tsp sesame oil
2 tbsp sugar
Special Sauce
1 tbsp soy sauce
1 tbsp rice wine vinegar
1 tbsp ketchup
1 1/2 tsp lemon juice
1 tsp sesame oil
1 tsp garlic chili paste
1 1/2 tsp corn starch
Preparation
Combine ingredients for individual sauces first.
Heat skillet with oil and cook chicken in batches, set aside. Once cooled, chop into even smaller bites.
Wipe out pan and add more oil. Cookie veggies. Add chicken back into the pan and add the stir fry sauce. Toss and simmer for a few minutes and then serve.
Scoop mixture into the pieces of lettuce. Top with special sauce.
Note: I like to add the special sauce to the mixture before serving, but it can also be added on individually.
