Asian Lettuce Wraps

Ingredients

Filling

  • Choice of lettuce (I use little gems) 

  • 2 chicken breast, chopped 

  • 1 cup water chestnuts, chopped 

  • 1 cup mushrooms, chopped 

  • 1 tsp garlic, chopped 

  • 1/2 cup carrots, chopped 

Stir Fry Sauce 

  • 3 tbsp soy sauce 

  • 3 tbsp brown sugar 

  • 1 tsp rice wine vinegar 

  • 1 tsp sesame oil 

  • 2 tbsp sugar

Special Sauce 

  • 1 tbsp soy sauce 

  • 1 tbsp rice wine vinegar 

  • 1 tbsp ketchup 

  • 1 1/2 tsp lemon juice 

  • 1 tsp sesame oil 

  • 1 tsp garlic chili paste

  • 1 1/2 tsp corn starch 

Preparation

  • Combine ingredients for individual sauces first. 


  • Heat skillet with oil and cook chicken in batches, set aside. Once cooled, chop into even smaller bites. 


  • Wipe out pan and add more oil. Cookie veggies. Add chicken back into the pan and add the stir fry sauce. Toss and simmer for a few minutes and then serve. 


  • Scoop mixture into the pieces of lettuce. Top with special sauce. 


  • Note: I like to add the special sauce to the mixture before serving, but it can also be added on individually.
