
Bourbon Pecan Chicken

Ingredients
4, 8 oz. Chicken breast
1/2 Cup pecans, finely chopped
1/2 Cup bread crumbs
1/4 Tsp salt
1 Egg
3 Tbsp milk
2 Tbsp olive oil
2 Tbsp brown sugar
1 1/2 Tbsp Dijon mustard
4 Tsp bourbon
1 Tbsp soy sauce
1/2 Tsp Worcestershire
1/3 Cup cold butter, cut into slices
Preparation
Prep: Preheat oven to 350 degrees
Stir nuts, crumbs, and salt into a shallow bowl. In a seperate bowl whisk together egg and milk. Dip each chicken breast into the egg mixture and then dredge in the nut mixture.
Heat olive oil in an oven-safe skillet, on medium heat. Add chicken and cook until browned on one side (about 5 minutes). Flip chicken and transfer to the oven. Bake for 10-15 minutes until chicken is cooked to 165 degrees.
Stir sugar, dijon, bourbon, soy and worcestershire in a small sauce pot. Bring to a simmer over Medium-Low heat.
Remove from heat and add slices of butter and stir in until melted.
Spoon sauce over prepared chicken and serve.
*Optional: garnish with more pecans and chopped green onion.
