Bourbon Pecan Chicken

Ingredients

  • 4, 8 oz. Chicken breast 

  • 1/2 Cup pecans, finely chopped

  • 1/2 Cup bread crumbs 

  • 1/4 Tsp salt 

  • 1 Egg 

  • 3 Tbsp milk 

  • 2 Tbsp olive oil 

  • 2 Tbsp brown sugar 

  • 1 1/2 Tbsp Dijon mustard 

  • 4 Tsp bourbon 

  • 1 Tbsp soy sauce 

  •  1/2 Tsp Worcestershire 

  • 1/3 Cup cold butter, cut into slices 

Preparation

Prep: Preheat oven to 350 degrees 

  • Stir nuts, crumbs, and salt into a shallow bowl. In a seperate bowl whisk together egg and milk. Dip each chicken breast into the egg mixture and then dredge in the nut mixture. 


  • Heat olive oil in an oven-safe skillet, on medium heat.  Add chicken and cook until browned on one side (about 5 minutes). Flip chicken and transfer to the oven. Bake for 10-15 minutes until chicken is cooked to 165 degrees.


  • Stir sugar, dijon, bourbon, soy and worcestershire in a small sauce pot. Bring to a simmer over Medium-Low heat.


  • Remove from heat and add slices of butter and stir in until melted. 


  • Spoon sauce over prepared chicken and serve. 


*Optional: garnish with more pecans and chopped green onion.
