Chicken Club Roulade

Ingredients

Chicken 

  • 1 Bacon slice, cooked 

  • 2 Chicken breast 

  • Emril's Essence Seasoning *

  • 1/4 -1/2 Avocado, sliced

  • 2 Tbsp Sundried tomatoes

  • 2 oz Feta 

Wine Mustard Sauce 

  • 1/4 cup White wine 

  • 1 Tbsp + 1 tsp Shallots, chopped

  • 1 Tbsp Dijon mustard 

  • 1/2 cup Heavy cream 

*Emril's spice made at home: 

  • 2 1/2 Tbsp Paprika 

  • 2 Tbsp Salt 

  • 2 Tbsp Garlic powder

  • 1 Tbsp Black pepper 

  • 1 Tbsp Onion powder

  • 1 Tbsp Cayenne pepper 

  • 1 Tbsp Oregano 

  • 1 Tbsp Dried Thyme


Preparation

  • Pound chicken breast into an 1/8", sprinkle with essence seasoning (see ingredients for the spice mix). 


  • Crumble bacon on top, add avocado, tomato and feta. Roll chicken and secure with toothpicks. 


  • Grill medium - high heat for 10-15 minutes. If using an oven, cook at 400 degrees for 20-25 minutes seam side down. 


  • While cooking, add shallots and wine to a saucepan over medium/high heat. Boil until wine is reduced to 1 tbsp. 


  • Add mustard and stir together. Add cream and let simmer for 2-3 minutes until it thickens and can coat the back of a spoon.


  • Baste the chicken with sauce and cut into slices to serve.
