
Chicken Club Roulade

Ingredients
Chicken
1 Bacon slice, cooked
2 Chicken breast
Emril's Essence Seasoning *
1/4 -1/2 Avocado, sliced
2 Tbsp Sundried tomatoes
2 oz Feta
Wine Mustard Sauce
1/4 cup White wine
1 Tbsp + 1 tsp Shallots, chopped
1 Tbsp Dijon mustard
1/2 cup Heavy cream
*Emril's spice made at home:
2 1/2 Tbsp Paprika
2 Tbsp Salt
2 Tbsp Garlic powder
1 Tbsp Black pepper
1 Tbsp Onion powder
1 Tbsp Cayenne pepper
1 Tbsp Oregano
1 Tbsp Dried Thyme
Preparation
Pound chicken breast into an 1/8", sprinkle with essence seasoning (see ingredients for the spice mix).
Crumble bacon on top, add avocado, tomato and feta. Roll chicken and secure with toothpicks.
Grill medium - high heat for 10-15 minutes. If using an oven, cook at 400 degrees for 20-25 minutes seam side down.
While cooking, add shallots and wine to a saucepan over medium/high heat. Boil until wine is reduced to 1 tbsp.
Add mustard and stir together. Add cream and let simmer for 2-3 minutes until it thickens and can coat the back of a spoon.
Baste the chicken with sauce and cut into slices to serve.
