
Fish Tacos

Ingredients
1 1/2 lbs White Fish
Oil
Soft shell tacos
Rub
1 1/2 tsp Smoked paprika
1 tsp Garlic powder
1 tsp Dry oregano
1 tsp Onion powder
1/2 tsp Cumin
1/2 tsp Salt
1/2 tsp Brown sugar
Sauce
1/2 Cup Sour cream
1 tsp Chipotle in adobo sauce
1 1/2 tsp Honey
1 tsp Lime juice
Salt, to taste
Slaw
8 oz Cabbage, chopped
1/2 Cup Carrot, grated
2 Scallions, sliced thin
1/4 Cup Cilantro, sliced
1/4 Cup Mayonnaise
2 Tbsp Cider vinegar
1 tsp Dijon mustard
1 tsp Sugar
1/8 tsp Salt
Preparation
Mix together spices for the rub. Drizzle a little oil on the fish and coat with the rub.
In a medium bowl, combine the ingredients for the slaw and set aside. Combine ingredients for the sauce and set aside.
Cook fish in your own desired way (I personally grill mine). Assemble and enjoy.
Makes approximately 9-12 tacos.
