Judy's Famous Frittata

Ingredients

  • 8 Eggs, scrambled or (2 cups eggbeaters or combination of both)

  • ½ cup Onion, chopped

  • ½ cup Mushrooms, chopped

  • 1 Roma Tomato, chopped

  • ½ cup  Spinach ,chopped

  • 1 cup Swiss cheese shredded (or other cheese of your choice)

  • Salt, to taste

  • **2 Tbsp Chia seeds

  • **2 Tbsp Hemp hearts (or flax seeds)

Preparation

Prep: Preheat oven to 350 


  • Heat 1-2 Tbsp oil in a large skillet over medium heat. 


  • Add onions and mushrooms until they start to soften. Add tomatoes and spinach and cook for a few minutes. Turn off burner. Now is the time to add your seeds, or any additional add ons. 


  • Add eggs and cheese and salt to taste. Stir well. Bake for 12-15 minutes in the oven (or until it has just set). Remove from the oven, and cut in desired number of pieces.


  • Reheats well in the microwave.

** You may use any combination of your favorite add ons in place of, or in addition to the above. (ham, salmon, etc.)
