
Judy's Famous Frittata

Ingredients
8 Eggs, scrambled or (2 cups eggbeaters or combination of both)
½ cup Onion, chopped
½ cup Mushrooms, chopped
1 Roma Tomato, chopped
½ cup Spinach ,chopped
1 cup Swiss cheese shredded (or other cheese of your choice)
Salt, to taste
**2 Tbsp Chia seeds
**2 Tbsp Hemp hearts (or flax seeds)
Preparation
Prep: Preheat oven to 350
Heat 1-2 Tbsp oil in a large skillet over medium heat.
Add onions and mushrooms until they start to soften. Add tomatoes and spinach and cook for a few minutes. Turn off burner. Now is the time to add your seeds, or any additional add ons.
Add eggs and cheese and salt to taste. Stir well. Bake for 12-15 minutes in the oven (or until it has just set). Remove from the oven, and cut in desired number of pieces.
Reheats well in the microwave.
** You may use any combination of your favorite add ons in place of, or in addition to the above. (ham, salmon, etc.)
