Apple & Blue Cheese Endive

Ingredients

  • 1 Tbsp Lemon juice

  • 1 Tbsp Water

  • 1 Large red apple, finely chopped

  • 2 Celery ribs, finely chopped

  • ¾ Cup Blue Cheese, crumbled

  • 3 Tbsp Mayonnaise

  • 4 Heads Belgian endive

  • ½ Cup Toasted nuts, chopped

Preparation

  • In a small bowl, combine lemon juice and water. Add apple and toss to coat. Drain and pat dry. 


  • Combine apple, celery, blue cheese and Mayo. Spoon 1 Tbsp of mixture onto each endive leave. 


  • Sprinkle with nuts and serve.
