Apple & Blue Cheese Endive

Ingredients
1 Tbsp Lemon juice
1 Tbsp Water
1 Large red apple, finely chopped
2 Celery ribs, finely chopped
¾ Cup Blue Cheese, crumbled
3 Tbsp Mayonnaise
4 Heads Belgian endive
½ Cup Toasted nuts, chopped
Preparation
In a small bowl, combine lemon juice and water. Add apple and toss to coat. Drain and pat dry.
Combine apple, celery, blue cheese and Mayo. Spoon 1 Tbsp of mixture onto each endive leave.
Sprinkle with nuts and serve.
