
Brie and Cherry Crostini

Ingredients
¼ cup Sugar
2 Tbsp Water
2 Tbsp Brandy
1 cup Dried cherries, chopped coarsely
¼ cup pecans, chopped
1 Tbsp Orange marmalade
24 Slices cocktail bread
24 Small slices Brie (6 oz)
2 Tbsp chives, chopped
Preparation
Prep: Preheat oven to 400.
In a small saucepan, combine sugar, water and brandy. Cook over medium heat until sugar is dissolved. Stirring occasionally. Add cherries.
Reduce heat to low, simmer for 5 minutes, stirring occasionally. Stir in pecans and marmalade. Take off heat and set aside.
Place slices of bread on a cookie sheet. Bake for 4-5 minutes or until toasted. Remove bread.
Top each with slice of cheese and cherry relish and sprinkle with chives.
Return to the oven and bake for an additional 4-6 minutes or until cheese is melted. Serve warm. Makes 24.
