Brie and Cherry Crostini

Ingredients

  • ¼ cup Sugar 

  • 2 Tbsp Water 

  • 2 Tbsp Brandy 

  • 1 cup Dried cherries, chopped coarsely 

  • ¼ cup pecans, chopped

  • 1 Tbsp Orange marmalade

  • 24 Slices cocktail bread

  • 24 Small slices Brie (6 oz)

  • 2 Tbsp chives, chopped

Preparation

Prep: Preheat oven to 400. 


  • In a small saucepan, combine sugar, water and brandy. Cook over medium heat until sugar is dissolved. Stirring occasionally. Add cherries. 


  • Reduce heat to low, simmer for 5 minutes, stirring occasionally. Stir in pecans and marmalade. Take off heat and set aside. 


  • Place slices of bread on a cookie sheet. Bake for 4-5 minutes or until toasted. Remove bread. 


  • Top each with slice of cheese and cherry relish and sprinkle with chives. 


  • Return to the oven and bake for an additional 4-6 minutes or until cheese is melted. Serve warm. Makes 24.
