
Deli Roll-ups

Ingredients
Roast Beef and Pepper Roll-Ups
1/2 Lb Deli roast beef, thinly sliced
1/2 Cup Roasted red pepper (3/4 Inch strips)
1/3 Cup Chive and onion cream cheese.
Fresh Rosemary for garnish
Turkey and Sun-Dried Tomato Roll-Ups
1/2 Lb Deli turkey, thinly sliced
1/2 tsp Minced garlic (or 1-2 roasted garlic, minced)
1/2 Cup Cream cheese
1/2 Cup Sun-dried tomatoes, drained and minced
Preparation
Roast Beef:
Spread each beef slice with cream cheese. Top with pepper at one edge. Roll up tightly. Refrigerate for at least 2 hours or until firm.
Cut into slices of desired thickness. Secure with fresh rosemary or toothpick. Makes around 40 1 inch appetizers.
Turkey:
Mix the cream cheese, garlic and tomatoes together. Spread each slice of turkey with the cheese mixture. Roll up tightly. Refrigerate at least 1 hour or until firm.
Cut each roll into desired sized pieces. Secure with a toothpick. Makes 40 1 inch appetizers.
