Garlic Tomatoes with Ricotta Topper

Ingredients

  • 1 tbsp olive oil 

  • 1 tbsp minced garlic 

  • Salt & pepper to taste 

  • 4 grape tomatoes, quartered 

  • 1/2 cup ricotta cheese 

  • 1/2 tsp grated lemon peel 

  • 4 slices multigrain bread, toasted until crisp 

  • 1/4 cup arugula, chopped 

Preparation

Prep: Preheat the broiler 

  • In a medium bowl, whisk olive oil, minced garlic, salt and pepper. Add tomatoes and toss to coat. 


  • Place tomatoes cut side up, on a baking sheet and broil until tender and beginning to brown, about 5 minutes. 


  • Meanwhile, stir ricotta, lemon zest, salt and pepper in same bowl. Spoon this mixture over toast and top with arugula. Cut the toast in quarters and arrange roasted tomato on top.
