Garlic Tomatoes with Ricotta Topper

Ingredients
1 tbsp olive oil
1 tbsp minced garlic
Salt & pepper to taste
4 grape tomatoes, quartered
1/2 cup ricotta cheese
1/2 tsp grated lemon peel
4 slices multigrain bread, toasted until crisp
1/4 cup arugula, chopped
Preparation
Prep: Preheat the broiler
In a medium bowl, whisk olive oil, minced garlic, salt and pepper. Add tomatoes and toss to coat.
Place tomatoes cut side up, on a baking sheet and broil until tender and beginning to brown, about 5 minutes.
Meanwhile, stir ricotta, lemon zest, salt and pepper in same bowl. Spoon this mixture over toast and top with arugula. Cut the toast in quarters and arrange roasted tomato on top.
