Guacamole Toast

Ingredients

  • 4 Avocados, diced

  • 1/2 Cup Feta or Cotija cheese, crumbled

  • 1 Tbsp Lime juice

  • 1 Tsp Salt

  • 1 Baguette

  • 2 Tbsp cilantro, chopped

  • Dash of chili powder

  • Optional toppings: Tomatoes, red pepper flakes

Preparation

  • Smash and incorporate avocado with fork--leaving some chunks. Mix in the remaining ingredients, tasting to add more flavor to your liking.


  • Slice baguette into 1/4 inch slices and place on a baking sheet. Put in the oven on broil for 2 minutes on each side. Keep an eye on them to make sure they don't burn. Should be golden on both sides. 


  • Let toast cool for al little, then spoon guacamole onto the baguette slices. Top with grape tomatoes, red pepper flakes or more cheese and chopped cilantro. Then serve.
