Mexican Parfait

Ingredients

  • 1 Cup Refried Beans 

  • 1 Tbsp Taco seasoning 

  • ½ Cup Salsa 

  • 2 Cups Sour cream

  • ¼ Cup Cilantro, fresh chopped 

  • 2 tsp Lime zest, minced 

  • 1 tsp Cumin & Coriander 

  • 2 Avocados, peeled and pitted 

  • 2 Tbsp Lime juice

  • 2 tsp Garlic, minced

  • Guacamole spice, optional

  • ½ Cup Cheddar cheese, shredded

  • 1 Cup Grape tomatoes, quartered

  • ¼ Cup Green onions sliced & Black olives sliced

  • Tortilla chips or Cheese crisp

  • 12, 2 oz plastic cups 

Preparation

  • Combine the following in separate bowls: 

- Combine beans, taco seasoning and Salsa. Set aside. 

- Whisk sour cream, cilantro, lime zest, cumin and coriander. Set aside. 

- Mash avocados, lime juic and garlic together (or use guacamole spice). Set aside. 


  • Transfer 3 mixes into separate plastic bags and snip off the corner of the bag. Squeeze some of each mixture into 12 two-ounce glasses starting with bean, ending with avocado. 


  • Top each parfait with cheese, tomatoes, green onions and olives. 


  • Cover and refrigerate for at least 4 hours. Top with tortilla chips or cheese crisp.
