Mojito Kababs

Ingredients
2 Tbsp Lime zest
6 Tbsp Fresh lime juice
5 Cups Assorted melons
1/3 Cup Sugar
1/3 Cup Rum
3 Tbsp Fresh mint, finely chopped
12 Bamboo skewers (5-6")
Preparation
Cut melons into 1-inch cubes
Place melon cubes in a large storage bag. Add zest, juice, sugar, rum and mint. Turn to coat the melon. Seal the bag squeezing out as much air as you can.
Refrigerate at least 1 hour to blend flavors but no longer than 24 hours.
Thread 4 or 5 melon cubes on each skewer. Discard the marinade.
