Mojito Kababs

Ingredients

  • 2 Tbsp Lime zest

  • 6 Tbsp Fresh lime juice

  • 5 Cups Assorted melons

  • 1/3 Cup Sugar

  • 1/3 Cup Rum

  • 3 Tbsp Fresh mint, finely chopped

  • 12 Bamboo skewers (5-6")

Preparation

  • Cut melons into 1-inch cubes

  • Place melon cubes in a large storage bag.  Add zest, juice, sugar, rum and mint. Turn to coat the melon.  Seal the bag squeezing out as much air as you can. 

  • Refrigerate at least 1 hour to blend flavors but no longer than 24 hours.

  • Thread 4 or 5 melon cubes on each skewer.  Discard the marinade.
