
Prosciutto - Wrapped Stuffed Dates

Ingredients
2/3 Cup Pistachios, de-shelled and finely chopped
1/4 Cup fresh basil, chopped
1 Tbsp Olive oil
1 Tbsp Balsamic vinegar
½ Tsp Orange zest, grated
Salt and pepper, to taste
12 Large pitted dates, sliced lengthwise
12 Thin prosciutto slices, halved lengthwise
Alternate Filling
2/3 Cups walnuts, toasted and finely chopped
1/2 Cup fresh parsley, minced
2 Tbsp Olive oil
Salt and pepper to taste
Preparation
Prep: Slice dates lengthwise (not cutting all the way through) and set aside.
Combine pistachios, basil, and oils in a bowl and season with salt and pepper to taste.
Mound 1 generous teaspoon filling into the center of each date half.
Wrap prosciutto securely around date halves, leaving date ends uncovered, and serve.
Note: dates can be refrigerated for up to 8 hours; let it come to room temperature before serving.
