Prosciutto - Wrapped Stuffed Dates

Ingredients

  • 2/3 Cup Pistachios, de-shelled and finely chopped

  • 1/4 Cup fresh basil, chopped

  • 1 Tbsp Olive oil

  • 1 Tbsp Balsamic vinegar

  • ½ Tsp Orange zest, grated

  • Salt and pepper, to taste

  • 12 Large pitted dates, sliced lengthwise

  • 12 Thin prosciutto slices, halved lengthwise

Alternate Filling

  • 2/3 Cups walnuts, toasted and finely chopped 

  • 1/2 Cup fresh parsley, minced 

  • 2 Tbsp Olive oil 

  • Salt and pepper to taste

Preparation

Prep: Slice dates lengthwise (not cutting all the way through) and set aside.


  • Combine pistachios, basil, and oils in a bowl and season with salt and pepper to taste.


  • Mound 1 generous teaspoon filling into the center of each date half.


  • Wrap prosciutto securely around date halves, leaving date ends uncovered, and serve.


  • Note: dates can be refrigerated for up to 8 hours; let it come to room temperature before serving.
