Prosciutto Roll

Ingredients
8 oz. Cream Cheese, softened
4 oz. Blue Cheese, crumbled
12 Slices Prosciutto
1 Cup Dried Figs, chopped
1 Tbsp. Olive Oil
1 Tbsp. White wine vinegar
1 tsp. Orange zest, minced
3 Cups Watercress
Salt and pepper, to taste
Preparation
In a small bowl, mix together cream cheese and blue cheese. Set aside.
Lay out prosciutto spacing 2-inches apart. Divide and spread cheese mixture evenly on prosciutto and arrange figs on top.
In a small bowl, whisk together oil, vinegar, and orange zest. Season with salt and pepper; toss with watercress.
Top figs with watercress and tightly roll prosciutto, like a jelly roll; then chill for at least 1 hour.
Cut each roll crosswise into thirds and serve.
Makes 36 rolls.
