Savory Cheesecake

Ingredients

  • 1 Cup Wheat crackers, crushed

  • 3 Tbsp. Butter, melted

  • 16 oz Cream cheese, softened

  • 1/4 Cup Whipping cream

  • 2 Eggs

  • 2 Cups Swiss cheese, finely shredded

  • 1 Cup Ham, chopped

  • 1/4 Cup Roasted red peppers, from jar

  • 2 Green onions, sliced (1/4 cup)

  • 1 Tbsp Thyme, fresh or 1/2 tsp dried

Preparation

Prep: Preheat oven to 350. 

  • In a bowl, mix crushed crackers and butter until well blended. Press evenly in the bottom of a ungreased 9" springform pan. Bake for 8-10 minutes or until golden brown. 


  • While crust is in the oven, blend together cream cheese in a large bowl with electric mixer on medium speed until smooth. Add whipping cream and eggs; beat until smooth. Stir in cheese, ham, peppers, onion and thyme. Spoon mixture evenly over crust in the pan. 


  • Bake cheesecake for 45-55 minutes or until center is set. Once out of the oven, run knife around edge of cheesecake to loosen. Cool completely for about an hour. Cover and refrigerate for at least 2 hours, but no longer than 48 hours. 


  • Remove sides of the pan. To serve, cut into thin wedges and serve with crackers.
