Smoked Salmon and Chive Cheesecake

Ingredients

  • 1/2 Cup Onion, finely chopped

  • 1/2 Cup Red pepper, finely chopped

  • 2 Cloves Garlic, minced

  • 1 Tbsp. Olive oil 

  • 16 oz. Cream cheese, softened

  • 3 Eggs, lightly beaten

  • 1/2 Cup Chives, minced

  • 1/4 Cup Parmesan cheese, grated 

  • 1/4 Cup Jarlsberg cheese, shredded 

  • 2 Tbsp. Milk 

  • 1 tsp. Worchestershire sauce

  • 1/2 tsp. Salt 

  • Dash of hot sauce

  • 3 oz. Smoked Salmon, chopped

Preparation

Prep: Preheat oven to 350 degrees. In a small skillet, saute onion, red pepper and garlic in olive oil until tender; set aside to cool. Line the bottom of a 9-inch spring form pan with parchement paper and set aside. 

  • In a large bowl, beat cream cheese until smooth. Add eggs and beat on low until combined. Stir in the rest of the ingredients except salmon until mixed well. Fold in the salmon. 


  • Pour into prepared pan. Place pan on a baking sheet. Bake in oven for 25-30 minutes or until the center is almost set. Cool on a wire rack for 10 minutes. Carefully run knife around the edge of the pan to loosen. 


  • Cool for 1 hour, then refrigerate overnight. 


  • Cut and serve with crackers.
