Smoked White Fish with Apple & Crème Fraîche

Ingredients
2 Medium sized apples, sweet and firm
8 oz. Smoked white fish
3 Tbsp. Chives, thinly sliced
2 Tbsp. Roasted walnut oil
1/8 tsp. Freshly ground black pepper
1/4 Cup Crème fraîche
Zest of a medium lemon
Preparation
Stand the apples upright on the cutting board and slice thin (approx. 1/8 inch slices. Don't include outermost slices) Then cut each round in half.
Flake the fish and toss with chives, walnut oil (or any substitute oil) and black pepper.
Divide the fish mixture among the apple slices. Place a small dollop of crème fraîche on each. Sprinkle with lemon zest and serve.
