Smoked White Fish with Apple & Crème Fraîche

Ingredients

  • 2 Medium sized apples, sweet and firm

  • 8 oz. Smoked white fish

  • 3 Tbsp. Chives, thinly sliced 

  • 2 Tbsp. Roasted walnut oil

  • 1/8 tsp. Freshly ground black pepper

  • 1/4 Cup Crème fraîche

  • Zest of a medium lemon

Preparation

  • Stand the apples upright on the cutting board and slice thin (approx. 1/8 inch slices. Don't include outermost slices) Then cut each round in half. 


  • Flake the fish and toss with chives, walnut oil (or any substitute oil) and black pepper. 


  • Divide the fish mixture among the apple slices. Place a small dollop of crème fraîche on each. Sprinkle with lemon zest and serve.
