Stuffed Caprese Tomatoes

Ingredients
24 Cherry tomatoes
2 oz Fresh mozzarella, cut into small cubes
2 Tbsp Balsamic vinegar
2 Tbsp Olive oil
1/4 cup Basil, fresh cut
Salt, to taste
Alternate
4 Tbsp Olive oil
1/4 Tbsp Red pepper flakes
Preparation
Slice top 1/4 inch of each tomato. Scoop out and discard the core. Cut a thin sliver off the bottom of the tomatoes so they will sit flat.
Stuff cheese about halfway inside each tomato. Drizzle with balsamic vinegar and oil. Sprinkle with salt and basil.
Alternate
Preheat broiler. Put stuffed tomatoes on a baking sheet and toss with 2 Tbsp olive oil, red pepper and salt. Stand them up and broil until cheese is browned and slightly soft (about 2 minutes).
Remove from oven. Plate them and drizzle with balsamic vinegar and oil, top with basil.
