Stuffed Caprese Tomatoes

Ingredients

  • 24 Cherry tomatoes

  • 2 oz Fresh mozzarella, cut into small cubes

  • 2 Tbsp Balsamic vinegar 

  • 2 Tbsp Olive oil 

  • 1/4 cup Basil, fresh cut 

  • Salt, to taste

Alternate

  • 4 Tbsp Olive oil 

  • 1/4 Tbsp Red pepper flakes 

Preparation

  • Slice top 1/4 inch of each tomato. Scoop out and discard the core. Cut a thin sliver off the bottom of the tomatoes so they will sit flat. 


  • Stuff cheese about halfway inside each tomato. Drizzle with balsamic vinegar and oil. Sprinkle with salt and basil. 


Alternate


  • Preheat broiler. Put stuffed tomatoes on a baking sheet and toss with 2 Tbsp olive oil, red pepper and salt. Stand them up and broil until cheese is browned and slightly soft (about 2 minutes). 


  • Remove from oven. Plate them and drizzle with balsamic vinegar and oil, top with basil.
