Tomato Queso Fresco on Cheese Crisp

Ingredients
1 Cup Monterey Jack cheese, shredded
1 Cup Guacamole (see guacamole toast recipe)
1/3 Cup Roma tomatoes, chopped
3 Tbsp Qureso Fresco (or Feta) cheese, crumbled
Cilantro leaves for garnish
Preparation
Prep: Preheat oven to 400.
Line cookie sheet with parchment paper. Spoon 2 Tsp jack cheese onto cookie sheet. Pat cheese into 2 inch rounds.
Bake cheese rounds in the oven for 6-8 minutes, or until edges are golden brown. Immediately remove from cookie sheet to a wire rack. Cool 5 minutes or until crisp
Mix a prepared guacamole with tomatoes and fold in your cheese. Place a dollop of guacamole cheese mix on cheese crisp. Garnish with cilantro.
